EGG LESS CHRISTMAS CAKE

INGREDIENTS-

25 gram walnuts
15-20 gm. golden raisins
20 gm. black currents
30 gm. cashews
100 gm. dates
25 gm. almonds
20 gm. pistachios
25 gm. glazed cherries
1 cup apple juice
2 cup Atta
1 tsp. baking soda
½ tsp. baking powder
½ cup sugar
2 tsp. water
1 cup water
1/3 cup olive oil
1.5 tsp. apple cider

Method-

Take all the dry fruits and nuts in a bowl.
Now finely chop all of them and collect in a mixing bowl.
Add the apple juice and mix very well.
Allow the fruits to soak in the apple juice for a day. keep covered in the fridge.
Bring the dry fruits + apple juice mixture to room temperature before you proceed with the recipe.
Grease a round pan very well with oil or butter.
Also preheat the oven at 180 degrees celsius before 10 mints you bake.
In a seive, take whole atta , baking soda, baking powder, ¼ tsp cinnamon powder, ½ tsp cardamom powder and sugar
sift all the dry ingredients.
next add the soaked dry fruits + apple juice mixture to the sifted dry ingredients.
with a spatula just mix lightly.
now fold the flour ingredients to a smooth batter.
pour the batter in a prepared pan.
gently shake and tap the pan so as to even out the batter.
place the pan in a preheated oven and bake the cake at 180 degrees celsius for 40-45 mints.
you can sift some powdered sugar on top of the cake to hide the cracks on the top.
slice and serve the cake. the cake can also be refrigerated.

VEGETABLES PIZZA PUFF

INGREDIENTS-

1 large-size Onion (chopped)
½ Capsicum (chopped)
2 large-size carrots (chopped)
6-7 Beans (chopped)
¼ cup peas
¼ cup sweet corn
2 table spoon Pizza sauce
½ tsp. sugar
½ tsp. black pepper
2 tea spoon oregano
¼ tsp. chilli flakes
½ tsp. dried Basil
1 tea spoon salt
1 table spoon white vinegar
6-7 Garlic cloves past
2table spoon ketchup
½ cup mozzarella cheese ( Grated)
1 table spoon oil

FOR MAKING PUFF DOUGH

2 cup Maida
1 ½ tea spoon baking powder
5 table spoon oil
½ tea spoon salt
Cold water
Oil for deep fry

METHOD-

Mix maida, baking powder, oil and salt in a bowl. Add cold water make smooth dough and set aside.
Make a Filling-
Take a heavy bottom kadai, add oil to it.
Fry onions in it. Add garlic paste to it
Add all vegetables ot it
Add ½ cup of water and salt to it
Cook the vegetables, then add all masala and ketchup
Turn the gas off and let it cool
Add grated cheese to the vegetables.
Make round balls of the dough
Now take a dough ball and roll it sparingly in the dry flour, so that it won’t stick to the rolling surface. Do not use a lot of dry flour or it will ruin the pastry dough.
Roll it out with the help of the rolling pin into an 8 inch circle. don’t roll out too thick. it should be just about 3-4 mm thick. Cut the edges of the circle with the sharp knife to form a square. Cut the square into two halves.
Now stuff the pastry by spreading the stuffing on one half of the square. Leave ample space on the borders, else you won’t be able to pack the puff.
Time to pack up.
Take the other half of the pastry and gently flip it over the stuffing. Try to pack it in such a way that there is no air left inside the puff. Now gently press the edges of the pastry together with the help of fork and pack it.
Transfer the puff to a plate dusted with flour. Prepare the remaining puffs in the safe fashion and keep them on the dusted plate.
Heat sufficient oil, carefully drop 2 to 3 puffs in the oil and allow them to fry on low heat on one side till golden. Flip the side and fry it till it turns golden.
Try not to flip the puff a lot many times. Remove the puffs on to a kitchen towel
Serve hot.

Ingredients

1 cup curd
1 cup suji
¾ cup sugar
2 pinches saffron
1 table spoon grated dry fruits
½ table spoon oil

Method

-Preheat oven to 180.c & greased in cake tin.
-In a bowl mix curd, suji, sugar, saffron
& grated dry fruits.
-Pour prepared batter into the cake tin and bake in the oven for 20 to 25 minutes.
-Serve them after 20-30 minutes.

SESAME MASALA PURI


SESAME MASALA PURI


Prep time-20 minutes, cooking time-25 minuets

INGREDIENTS-


1 cup Atta
½ cup suji
½ cup Maida
2 table spoon urad dal roasted & grained
2 tea spoon gram flour
2 tea spoon garam masala
2 tea spoon chili powder
½ cup oil + deep fry
2 tea spoon sesame seeds
Salt to taste

METHOD-


Make the urad dal paste.
Mix Atta, Maida, suji and gram flour in a bowl and add all ingredients.
Mix well now add water make smooth dough and set aside.
Make small balls and roll into puries.
Heat oil in a kadai.
Once the oil is hot, drop the puries gently in hot oil and fry both sides.
Serve with any favorite chutney, sauce or pickle.

EGGLESS DATES CAKE

Ingredients-

15-16 dates without seeds
1/2 cup sugar
3/4 cup milk
1 cup wheat flour
1/2 cup oil
1tea spoon soda1 tea spoon lemon juice
1 service spoon cocoa powder
1 service spoon chopped almond, cashew and pista

method-

Mix Dates, sugar and milk in mixture grinder. Put all your mixture into bowl. Now, mix wheat flour, refined oil, chocolate powder and soda. Brush with oil in the mold and set on 180bdegree for pre heat. Mix both the mixture. Add lemon juice in mixture and blend properly. Put chopped cashew and almond for garnish. Bake them for 10-15 minutes on 180 degree.
Serve after 10 minutes.

Shahi Mashroom Paneer






Shahi Mashroom Paneer


Ingredients

150 gm paneer (cut in to 1 inchs cubes)

150gm mushroom(boil and cut in to pieces)
2 onions
2 table spoon oil
1tea spoon jeera
3 tamatoes
100gm fresh cream
1tea spoon kasuri methi
25gm ginger
1/2teaspoon turmeric
red chilli powder(to taste)
1table spoon coriander
salt (according to taste)
3 table spoon shahi paneer masala
50gm cashew nut

method

Clean,wash& halve mushrooms.Cut paneer into half inch sized cubes.
Grind cashew nut into fine paste using ½ cup of water .
Grind Onions,tamato and ginger into fine paste.
Heat oil in a pan add jeera,turmeric,red chilli& onion-ginger paste and mix it .
Fry it till it becomes brown.
Add shahi paneer masala,cashew paste &cream
Add mushroom & paneer mix it well and cook for 2 to three minutes.
add kasuri methi,salt,1½ cup of water
Let it boil for 2 minutes.
Garnish it with cream& corriander.
Serve it.

Schezwan sauce



Schezwan sauce

Prep time -20 minutes, cooking time -15 minutes

Ingredients-

Red chilles-20 unseeded
Garlic and ginger paste 2 table spoon
Onion 4-5 chopped
Sugar 2 table spoon
Salt to taste
Soya sauce 2 tea spoon
Tomato ketchup ½ cup

Method-

Take one cup of hot water
Add red chilies and let it rest for 10 minutes
Now grind the chills.
Heat the oil a nonstick kadai, add onion, saute for 2 minutes add ginger, garlic paste.
Stir till it becomes light brown in color
Add chili paste, soya sauce, sugar, salt and tomato ketchup mix till the sauce thickens.
Cool the sauce and store it in an airtight container in the refrigerator.
