Gobi Kheema



Gobi Kheema

Ingredients

500 gram Cauliflower
3 tbsp oil
1 large Onion, finely chopped
3 cloves Garlic, or to taste, finely chopped
1 tbsp grated Ginger
2 large Tomatoes, finely chopped
1/4 tsp Cinnamon ground
1/4 tsp Cardamom powder
1/8 tsp Cloves ground
2 tsp Kashmiri Chilli powder
2 tsp Garam Masala
Salt and Pepper to taste

Method-

Grate the cauliflower
In the same skillet, add oil and saute the onions, garlic and ginger along with salt for around 5-6 minutes - or until its aromatic and onions are soft and slightly brown.
add the chopped tomatoes and cook for around 5-8 minutes until the tomatoes are soft and get mushy, saute for a minute.
Add the cauliflower, Now add the all spices and ½ cup of water.
and let it cook for another 5 minutes. I close the lid for the flavors and aroma to remain intact.

Serve hot, with a garnish of coriander leaves. It goes well with rice based dishes and also enjoyed it with plain whole wheat Kulcha.

Mirchi wada

Ingredients-

6 Green chillies large
5-6 potatoes boiled
½ tsp Red chilli powder
1tsp garam masala
1 ½ tsp chaat masala
Salt to taste
Coriander leaves

For batter-

1 cup besan
1tsp baking powder
1tsp red chilli powder
Salt to taste
Oil for deep fry

Method-

Wash, boil , peel and grate potatoes. Add chilli powder, garam masala, chaat masala, chopped coriander leaves and salt mix well. Divide into six portions.
Wash, wipe dry green chillies. Slit and remove seeds.
Stuff this mixture into the green chillies
Prepare a thick batter using batter using besan, baking powder, red chilli powder, salt and about one cup of water.
Heat sufficient oil in a kadai to a moderate temperature. Dip stuffed green chillies into besan batter and deep fry until golden brown.
Remove, drain onto an absorbent paper napkin and serve it with chutney.

Sweet corn cheese ball

Ingredients

½ cup sweet corn boiled
½ cup potato boil and mashed
1 tea spoon butter
1 table spoon maida
½ cup mozzarella cheese grated
Salt
½ tsp Black pepper powder
½ tsp Oregano
½ cup milk
1 cup bread cramps
Oil to deep fry
1 onion finely chopped

Method:

Heat butter in non-stick pan
Stir maida in pan till it gets light brown
Add milk and water if required and prepare soft dough
Bring it on normal temperature and mix all the ingredients except oil and bread cramps
Prepare medium sized ball
Roll these balls on bread crumps and deep fry them till it gets golden brown
Serve it with chutney and sauce

Creamy mushroom


Ingredients-



100 gram mushroom
4 table spoon cream
1 table spoon curd
2 tea spoon ginger & garlic paste
2tea spoon onion paste
¼ tea spoon black pepper powder
2 tea spoon oil
1 tea spoon garam masala


Salt to taste

Method

Divide mushroom in four equal pieces and wash them properly.
Heat the oil in kadhai and add ginger garlic paste and onion paste
Fry it and add mushroom and salt
Now cover it with lid till mushroom gets soft
Now remove the lid and add curd and cream
Add black pepper, garam masala and fry it till it leaves oil.
Garnish it with cardamom leaves and serve hot..!!

EGG LESS CHRISTMAS CAKE

INGREDIENTS-

25 gram walnuts
15-20 gm. golden raisins
20 gm. black currents
30 gm. cashews
100 gm. dates
25 gm. almonds
20 gm. pistachios
25 gm. glazed cherries
1 cup apple juice
2 cup Atta
1 tsp. baking soda
½ tsp. baking powder
½ cup sugar
2 tsp. water
1 cup water
1/3 cup olive oil
1.5 tsp. apple cider

Method-

Take all the dry fruits and nuts in a bowl.
Now finely chop all of them and collect in a mixing bowl.
Add the apple juice and mix very well.
Allow the fruits to soak in the apple juice for a day. keep covered in the fridge.
Bring the dry fruits + apple juice mixture to room temperature before you proceed with the recipe.
Grease a round pan very well with oil or butter.
Also preheat the oven at 180 degrees celsius before 10 mints you bake.
In a seive, take whole atta , baking soda, baking powder, ¼ tsp cinnamon powder, ½ tsp cardamom powder and sugar
sift all the dry ingredients.
next add the soaked dry fruits + apple juice mixture to the sifted dry ingredients.
with a spatula just mix lightly.
now fold the flour ingredients to a smooth batter.
pour the batter in a prepared pan.
gently shake and tap the pan so as to even out the batter.
place the pan in a preheated oven and bake the cake at 180 degrees celsius for 40-45 mints.
you can sift some powdered sugar on top of the cake to hide the cracks on the top.
slice and serve the cake. the cake can also be refrigerated.
